Since opening his first ramen shop with his mother out in the midst of a rice field in a small town in Japan, Chef Kawai has developed more than 100 different recipes for his innovative fusion ramen. In 2010, the Japanese show Shittoko named him winner, granting him the honor of being named the chef with the best fusion ramen after donning him with a slippery noodle crown.

Today, half a dozen of his ramen shops thrive in and around Tokyo, and the Las Vegas location embodies the same Japanese vibe with a welcoming atmosphere. The color palette of the interior mimics that of the Japanese flag, with bright orange-red seats and immaculate white countertops throughout. On the menu, 10 variations of ramen range from the classic shiroi tonkotsu to Kawai’s innovative carbonara ramen, crowned with thick-cut bacon, scallions, and egg yolk.
