It’s hard to pin down Pizza Lotto’s influences. The pizzeria traces its spiritual roots to the first margherita pizza created by chef Raffaele Esposito in 1889. The elegant simplicity of mozzarella, basil, and marinara—chosen by the original pizza chef as much for their flavor as their Italian-flag colors—inspires their traditional pies. These include the quattro formaggi topped with fresh mozzarella, fontina, parmesan, and ricotta. And, of course, their sauce is made from San Marzano tomatoes.

From New York, PIzza Lotto borrows the tradition of hand-tossed dough baked in a brick-fired oven at 650 degrees, which is the exact temperature of the rush-hour A train. They even imported the brick straight from Long Island. And finally, the pizza joints borrows the great tradition of light lawlessness from Vegas itself, with in-house gaming and daily chances to score free pizza online.
